Chicken Artichoke Pizza -* Maggie's Specialty*

This recipe is delicious Mags. It is quicker to make then to order from Broders....well pretty close.artichokepizza

  • 3 Boneless skinless Chicken Breast
  • 1 Jar of marinated artichoke hearts undrained
  • 1 garlic clove minced
  • 1 TJ's Herb and Garlic Pizza crust
  • 4 Roma Tomatoes sliced
  • 2 cups shredded Mozzarella cheese
  • Sliced Mushrooms
  • Dried Basil

Pre-Heat oven to 425. Spread pizza crust and cook crust till it is almost done! Remove from oven when almost done! Cut Chicken into Pieces. I use a scissors and just cut into bite size pieces. Drain artichoke hearts-reserve liquid. Chop the artichokes and set aside! Place artichoke liquid in large non stick skillet, and bring to a boil until until most of the liquid has evaporated, about 1 minute. Add chicken and garlic to the liquid in the pan. Cook chicken until done. Add mushrooms. Stir in artichoke hearts. Remove from heat.

Brush some olive oil on pizza crust and place sliced tomatoes evenly on the crust! Spread chicken mixture over pizza crust...MAKE SURE, all the liquid is drained and does not make it on to the pizza crust otherwise it gets really soggy. Sprinkle with basil and top with cheese. Bake pizza until cheese is melted and is browning a bit.
