Strawberry Spinach Salad

  • 2 tablespoons roasted sesame seeds
  • 1/4 cup cooked crisp bacon or bacon substitute Bacos...broken into small pieces
  • 1 tbsp white sugar (according to taste)
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • green onion or red onion - amount to your taste
  • 1 pack fresh baby spinach - rinsed, dried
  • 1 or 2 boxes of strawberries - cleaned, hulled and sliced (keep some spares handy, though!)
  • 1/4 cup almonds, blanched and slivered or 1/4 cup roasted sunflower seeds

Directions:

In a medium bowl, whisk together the sesame seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce. Cover, and chill for one hour. In a large bowl, combine the spinach, strawberries, onions, bacon and almonds or sunflower seeds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
